1 cup natural sugar (or ½ cup honey)
1 cup mashed bananas (3-4)
1 tsp lemon juice
2 cups sifted flour
3 tsp baking powder
½ tsp sea salt
1 cup nuts
Cream oil and sugar together. Beat eggs until light and add in pressed bananas and lemon juice. Blend with creamed mixture. Mix dry ingredients in a separate bowl – flour, baking powder and salt. Then quickly mix in with banana mixture, being careful to not over mix.
Add nuts if desired. Bake in oiled loaf pan at 375 for 1 ½ hours.
Note: If you want more of a cake like texture, add in ½ cup milk and 1 tsp vanilla.
