3 cups dried lentils
14 cups water or broth
1 TBL sea salt (up to 2 if your broth is salt free)
2 medium onions, chopped
1. Sauté onions in a little bit of water (use your stock pan)
2. Then add lentils, remaining water and salt on medium/high heat for 20 minutes, then turn down to low for another 10-15 minutes.
3. Serve as is or with a variety of options: dollop of sour cream or salsa (or both), a side salad and some organic corn chips, pesto and bread, etc.
