- 3 cups whole wheat flour freshly milled
- 1/3 cup extra virgin olive oil
- 1 tsp sea salt
- 1 cup warm filtered water
- I mix the flour and oil with a fork (machine mixing doesn’t work well) Then I dissolve the salt in the warm water before mixing it with the flour/oil mixture. Knead for 5-7min until the dough makes a nice smooth ball. Let the dough rest for 30 minutes. Oil the counter top. Makes 16 tortillas: divide the dough in 1/2 then 1/4s, then 1/2 again and have 16 roughly similar balls of dough. Start pressing and rolling while warming the skillet. Large skillets will fit 3 tortillas at a time. Drizzle some oil in the skillet, then cook until fairly crisp. Finish by transferring to a terra cotta tortilla warmer where the steam will make them perfectly soft (or try a plate with a plate on top, over the tortillas, to trap steam).
