Pair this side dish with beans, salsa, chopped tomatoes, sour cream and a dark green salad.
1 onion, chopped
2 cloves garlic, minced
2 TBSP butter or coconut oil
1 tsp sea salt
½ tsp pepper
2 tsp cumin
1 ½ cups dry brown rice
3 cups chicken broth (or water)
¾ cup salsa or canned diced tomatoes
Sauté onion and garlic in butter until soft. Add rest of ingredients, stir well, and bring to a boil. Cover, and turn down to low – simmer for ½ hr or until all liquid is absorbed. Enjoy!!
