- 4-8 zucchini - we sliced it in 3-4" strips but rounds would work too
- 1/2 - 1 onion diced
- 1-3 cloves of garlic, freshly pressed
- 2 tbs of coconut oil
- sea salt to taste
- Heat the oil, onions and garlic over medium high for a few minutes until everything sizzling. Add the zucchini and cook for 5-7 minutes until it's tender. Sprinkle on the salt and serve hot.
